3 cups Self raising flour
1/4 tsp Salt
1/2 cup Sugar
4 Eggs – lightly beaten
2 tsp Ground cinnamon
2 Oranges – zest and juice
160 ml Canola oil
1/2 kg Carrots grated
1 cup Raisins
1 cup Orange juice
Method:
1. Preheat oven to 160C.
2. Line a large loaf tin with baking paper.
3. Combine flour, salt, cinnamon, and sugar in a large bowl. Stir to combine.
4. Add juice, zest, eggs, oil and extra orange juice to the flour and fold through.
5. Add grated carrot and raisins and mix in well.
6. Pour batter into the prepared loaf tin and spread evenly, smoothing the top.
7. Bake for 70 minutes or until a skewer comes out clean. Cover with foil if it is becoming too brown.
8. Serve warm or toasted with natural yogurt and honey.
