Baked Ocean Salmon Fillet With Prawns & Pumpkin Nut Butter 24/11/2009

Serves 6-8

Description:

Baked Ocean Salmon Fillet With Prawns & Pumpkin Nut Butter

Ingredients:

* 1 Med sized salmon fillet (skin on pin bones removed)
* 6 large fresh prawns
* 100g butter
* 1 bunch sage leaves
* 1 lemon
* Salt and pepper
* 60g pumpkin seeds
* 200g pumpkin puree

Walnut pesto:
* 100g walnuts
* 100g pine nuts
* 1 bunch fresh basil
* 200ml olive oil
* 100g parmesan cheese
* 1 red chilli

Method:

In a blender pulse together all ingredients to form a rough paste.

Place the fish fillet skin side down onto some greaseproof paper, season with salt and pepper then spread the walnut pesto on the top.

Bake in a hot oven for 6 mins until just cooked. Remove and place on the serving platter with the pumpkin puree.

In a fry pan melt the butter and add the prawns cook over high heat, as the prawns become cooked, remove them and add the pumpkin seeds and the sage leaves cook until butter goes light brown.

Add a squeeze of fresh lemon and place the prawns back into the butter.
Spoon the prawns and the butter over the salmon and serve.

Notes:

This is a great dish as part of a “buffet style” lunch or as an option to Turkey at a Christmas lunch.
