Summer Pasta Salad 10/11/2009

Serves 6

Description:

Summer Pasta Salad by Mike Moore

Ingredients:

100g fresh peas
100g fresh broad beans (shelled)
100g green beans (chopped)
1 green zucchini (diced)
1 onion (diced)
1 clove garlic
150g chickpeas
100g cannellini beans
Olive oil
1 Lemon juice and zest
Sea salt and pepper

Pasta
500g penne pasta (cooked and cooled under cold water)
200g fetta cheese

Sauce
150g peeled red peppers
1 clove garlic
2 tablespoons red wine vinegar
60g whole almonds
Pinch paprika pepper
150ml olive oil
Sea salt

Method:

In a pan warm the olive oil add the garlic and onion and cook until tender, add the zucchini and turn the heat up cook for 4 mins.
Add the chickpeas and the beans season well then add the green vegetables cook for a minute or two squeeze the lemon juice and zest over.
Serve onto the pasta.

For the sauce, in a blender pulse the peppers with the garlic, almonds and red wine vinegar, gradually add the olive oil adjust the seasoning.

To serve: Dress the pasta with the sauce and place into a serving bowl, add the green salad on the top and crumble fetta cheese over, drizzle with a little olive oil and season with a lot of freshly ground pepper.
